In early summer, sea kale is an arresting combination of gathered blue-gray wavy leaves surrounding upward-thrusting stems just bursting with clusters of white cross-shaped fragrant flowers. It is an unusual ornamental edible perennial savored like asparagus, with the bonus of broccoli-like edible buds and sweet roots.

PLACEMENT & CULTIVATION
Sea kale is an uncommon vegetable that stars as an ornamental in containers, seaside gardens, and dry gardens in well-drained neutral soils. Somewhat drought tolerant when established, it prefers cooler regions; in hot summer areas, provide afternoon shade. Lovely wavy blue-gray leaves and fragrant white flowers in early summer are followed by decorative round lime green seedpods. The mild, sweet, early spring shoots are harvested and prepared like asparagus, and roots from mature specimens can be sliced off later in the season and prepared as any root vegetable.
